Method
- Poach 100 g of chicken breast in barely simmering water for 12 to 15 min, leave to cool slightly, then shred it with a fork.
- Soak 30 g of rice vermicelli in hot water for 8 to 10 min, drain and roughly snip with scissors.
- Cut ½ mango into thin batons, finely chop 10 g of mint and shred 30 g of lettuce.
- Fill a shallow bowl with warm water. Dip a sheet of rice paper in it for 10 to 15 seconds, until it is pliable but still slightly firm. It keeps softening out of the water, so do not let it go limp.
- Lay it flat on a damp tea towel and place some vermicelli, chicken, mango, lettuce and mint across the lower third. Fold in the sides, then roll up tightly. Repeat with the 3 other sheets.
- Serve straight away with 1 tbsp of nuoc mam (fish sauce), without stacking the rolls (they stick together).
