Method
- Brown 250 g of white fish (thiof or cod) in a drizzle of oil for 4 to 5 min on each side, then set aside.
- Fry 1 onion and 2 garlic cloves in the same casserole dish for 3 to 4 min, add 200 g of chopped tomatoes and 1 tbsp of tomato purée, and simmer for 5 min.
- Add 1 carrot, 100 g of cabbage and 1 aubergine, add enough water to cover, put the lid on and simmer over a low heat for 30 to 35 min until the vegetables are tender. Return the fish to the pot for the last 10 minutes.
- Take out the fish and vegetables, then cook 100 g of rice in the remaining broth for 15 to 18 min until absorbed. Serve the rice with the fish and vegetables.
